Green Teas

Green tea is the original tea made from the Camellia Sinensis plant.The Chinese were the first people to drink tea and from there tea was introduced to Japan, India and later to Europe. Unlike black tea, green tea is not oxidized and the goal of processing is to preserve the green color.

In general, Chinese green tea is pan fried to lock in the green color. Chinese green tea tends to have a toasty and sometimes smoky flavor. Japanese green tea is steamed to preserve the green color and often has a grassy or vegetal taste. Due to this processing, green teas have a higher level of chlorophyll, polyphenols and antioxidants than other teas.
